Ingredients

Loaf Batter

  • 1 ½ cups (190g) all-purpose flour

  • 1 ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup (115g) unsalted butter, softened

  • ¾ cup (150g) granulated sugar

  • 2 large eggs, room temperature

  • ½ cup (120ml) milk or buttermilk

  • 1 tsp vanilla extract

  • 1 cup fresh or frozen blueberries

  • 4 oz (115g) cream cheese, softened

  • ¼ cup (50g) sugar

  • 1 egg yolk

  • ½ tsp vanilla extract

 Instructions

  1. Preheat oven to 175°C / 350°F.
    Line a loaf pan with parchment paper.

  2. Make the cream cheese swirl
    Beat cream cheese, sugar, egg yolk, and vanilla until smooth. Set aside.

  3. Prepare dry ingredients
    Whisk flour, baking powder, and salt.

  4. Cream butter & sugar
    Beat until light and fluffy (2–3 minutes).

  5. Add eggs & vanilla
    Beat in eggs one at a time, then vanilla.

  6. Combine
    Alternate adding dry ingredients and milk, starting and ending with dry. Mix just until combined.

  7. Fold in blueberries
    Toss blueberries with 1 tbsp flour, then gently fold into batter.

  8. Assemble

    • Spread half the batter into the pan

    • Dollop cream cheese mixture

    • Add remaining batter

    • Swirl gently with a knife

  9. Bake
    Bake 55–65 minutes, until a toothpick comes out mostly clean.

  10. Cool
    Rest 15 minutes in pan, then cool completely on a rack.
