Spinach Artichoke & Feta Flatbread Bites

Ingredients:

2 small flatbreads or naan
1 cup fresh spinach, chopped
½ cup artichoke hearts, chopped
½ cup crumbled feta cheese
2 tbsp cream cheese or ricotta
1 clove garlic, minced
1 tbsp olive oil
Salt & pepper, to taste
Optional: pinch of red pepper flakes

Directions:

Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
Sauté spinach and garlic: heat olive oil in a pan over medium heat. Add spinach and garlic, cook until wilted, then remove from heat.
Mix toppings: combine sautéed spinach, artichoke hearts, feta, and cream cheese in a bowl. Season with salt, pepper, and optional red pepper flakes.
Assemble flatbreads: spread the mixture evenly over the flatbreads.
Bake: place flatbreads on the baking sheet and bake for 10–12 minutes, until golden and slightly crispy.
Cut into bites and serve warm as an appetizer or snack.
