2 cups shredded cheese (cheddar, Colby-Jack, or a blend)
-
1 small onion, diced (optional)
-
2 cloves garlic, minced (optional)
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp paprika
-
½ tsp dried thyme or Italian seasoning
-
1 tbsp butter or olive oil (optional, for extra richness)
 Instructions

Add liquid
Pour chicken broth evenly over the chicken and rice. Add butter or olive oil if using. -
Cook
Cover and cook on HIGH for 3 hours or LOW for 5 to 6 hours, until rice is tender and chicken is fully cooked. -
Shred & mix
Remove chicken, shred with two forks, then return it to the crockpot. Stir well. -
Add cheese
Sprinkle shredded cheese over the top. Cover and cook an additional 10 to 15 minutes until melted. -
Serve
Stir one final time and serve warm.
 Notes
-
Rice absorbs liquid differently depending on brand. Add ¼ to ½ cup extra broth if needed.
-
For creamier texture, stir in ¼ cup sour cream or cream cheese at the end.
-
Best served fresh but reheats well.
 Tips for Success
-
Use long-grain white rice only. Brown rice requires more liquid and longer cooking.
-
Shred chicken while hot for easiest texture.
-
Spray crockpot with nonstick spray for easy cleanup.
-
Avoid lifting the lid during cooking to maintain heat.
