  • Add fat, then ground beef and pork.

  • Cook until fully browned, breaking up meat.

  • Season with salt and pepper.

2️⃣ Simmer

  • Pour in beef broth.

  • Bring to a gentle simmer.

  • Reduce heat to low, cover, and simmer 30–45 minutes.

  • Stir occasionally.

3️⃣ Make It Creamy (Optional)

  • Stir in heavy cream.

  • Simmer uncovered 5–10 minutes until thickened.

4️⃣ Taste & Adjust

  • Adjust salt.

  • Add optional seasonings if using.

Pro Tips for Best Chili

  • Fat = flavor. Don’t drain the grease.

  • Simmer longer for deeper flavor.

  • Want thicker chili? Simmer uncovered or add 2 oz cream cheese.

  • Want spicier (non-strict)? Add cayenne.

Variations

  • White Carnivore Chili: chicken thighs + cream + broth

  • Cheeseburger Chili: add cheddar at the end

  • Slow Cooker: low 6–8 hours after browning meat
