Garlic Roasted Okra is a simple yet addictive side dish where fresh bhindi is roasted until lightly crisp on the outside and tender inside. Infused with garlic and mild spice, it’s naturally vegan, gluten-free, and perfect as a quick weekday side or healthy snack. Roasting removes okra’s sliminess and brings out a nutty, savory flavor.

Ingredients (Serves 3–4)

  • 500 g fresh okra (bhindi), washed & completely dried
  • 2 tbsp olive oil or plant butter
  • 1 tsp garlic powder or 3 fresh garlic cloves, minced
  • 1 tsp paprika or Kashmiri chili powder
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper (optional)
  • ½ tsp lemon juice (optional, for finishing)

Instructions

  1. Preheat oven to 220°C (425°F). Line a baking tray with parchment paper.
  2. Trim the tops and tails of the okra. Slice lengthwise into halves (or leave whole if small).
  3. In a large bowl, toss okra with olive oil/plant butter, garlic, paprika, salt, and pepper.
  4. Spread okra in a single layer on the tray (do not overcrowd).
  5. Roast for 20–25 minutes, flipping once halfway, until lightly browned and crispy at edges.
  6. Remove from oven and finish with a light squeeze of lemon juice if desired.
  7. Serve hot.
