⭐ Low-Syn Turkey Sausage Rolls

Ingredients

500g turkey mince (2% fat or less)

1 small onion, very finely grated or minced

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika (optional but delicious)

1 tsp dried sage (or mixed herbs)

½ tsp black pepper

1 egg, beaten (half for binding, half for brushing)

1 sheet light puff pastry (ready-rolled)

Instructions

Preheat oven to 200°C / 400°F / Gas 6. Line a baking tray with baking paper.

Make the filling:
In a bowl, mix turkey mince, onion, garlic powder, onion powder, paprika, sage, salt, pepper, and ½ beaten egg until well combined.
TIP: Chill 10–15 mins — helps the mix firm up and shape easier. -
Prepare pastry:
Unroll your pastry sheet and cut lengthwise into 2 long strips. -
Form the sausage meat:
Divide turkey mince into 2 equal portions.
Shape each portion into a long sausage log along the center of each pastry strip. -
Roll up:
Fold pastry over the mince, seal the edges by pressing down with a fork.
Make sure the seam is underneath so they don’t open while baking. -
Slice:
Cut each long roll into 10 bite-size pieces (20 total). -
Egg wash & vent:
Brush tops with remaining beaten egg.
Use a sharp knife to make a small slit on top of each roll (lets steam escape & crisps better). -
Bake:
Place on tray and cook 25–30 minutes until golden brown and the turkey is fully cooked. -
Cool slightly before serving — the filling gets juicier once it settles!
