This Sugar-Free Carnivore Vanilla Cake is a rich, soft, and satisfying dessert made without flour, sugar, or plant ingredients. It’s high in protein, naturally low in carbs, and perfect for anyone following a carnivore, keto, or animal-based lifestyle. Lightly sweet, vanilla-forward, and surprisingly fluffy — you’d never guess it’s completely grain-free.


Ingredients

  • 6 large eggs (room temperature)

  • 8 oz cream cheese, softened

  • ¼ cup melted butter or ghee

  • ¼–½ cup powdered allulose or monk fruit (optional, to taste)

  • 1 tablespoon vanilla extract

  • ½ teaspoon salt

(Optional for extra protein)

  • ¼ cup unflavored whey protein isolate or egg white protein


Instructions

  1. Preheat oven to 325°F (165°C). Grease an 8-inch round cake pan or line with parchment paper.

  2. In a blender or food processor, add eggs, cream cheese, butter, sweetener (if using), vanilla, and salt.

  3. Blend until completely smooth and creamy. Scrape sides if needed.

  4. If using protein powder, blend it in last until just combined.

  5. Pour batter into the prepared pan and tap gently to remove air bubbles.

  6. Bake for 40–45 minutes, until the center is set and the top is lightly golden.

  7. Turn oven off, crack the door, and let cake cool inside for 10–15 minutes to prevent sinking.

  8. Remove and cool completely before slicing.

  • Cream cheese frosting (cream cheese + butter + sweetener)
